On the nose, Octomore 15.1 greets you with an intense wave of peat smoke, but behind it lies a beautiful complexity. Aromas of charred wood, sea spray, and earthy minerals intertwine with subtle notes of vanilla, honey, and caramel from the bourbon barrels. A hint of citrus zest and fresh herbs adds a vibrant lift.
The palate is bold and rich, as expected from its high PPM, with the peat smoke dominating initially. As the smoke begins to soften, flavors of creamy vanilla, burnt sugar, and toffee from the first-fill bourbon casks emerge. The re-charred casks bring layers of dark chocolate, toasted oak, and a peppery spice that adds complexity to the experience. There’s a pleasant nuttiness and warmth that develops as the whisky opens up, alongside a gentle fruitiness of green apples and lemon zest.
The finish is long, smoky, and warming. The lingering peat smoke is balanced by sweet oak, a touch of spice, and a lasting note of charred vanilla. It leaves a clean, slightly briny finish with hints of black pepper and dried fruits.
