Nose: The aroma opens with an inviting bouquet of fresh citrus zest and vibrant green apples, intertwined with the unmistakable scent of gentle peat smoke. Subtle notes of sea breeze and salt-kissed coastal air enhance the maritime character, while a touch of vanilla and honey from the bourbon casks adds sweetness. The sherry influence brings a soft hint of dried fruits, particularly raisins and sultanas, alongside a delicate nuttiness.
Palate: The first sip reveals a beautifully balanced combination of flavors. Smoky peat is immediately present but not overpowering, providing a warm, earthy foundation. Sweet malt and vanilla cream from the bourbon casks meld with richer sherry-driven flavors of dark chocolate, dried figs, and toffee. There’s a lovely interplay between the sweetness and the underlying peat, with a subtle spice emerging, reminiscent of cinnamon and cloves.
