Caol Ila Distillery on the Isle of Islay is famous for the stunning view from the still house windows looking out across the Sound of Islay and for the objects which have passed by including naval battleships, smugglers in dinghies, submarines and whales. Caol Ila Distillery was established in 1846 by Hector Henderson on a sheltered but rocky stretch of coast on north east Islay. Now the largest malt whisky distillery on Islay and visitors are welcomed at the distillery visitor centre where distillery tours are available. Caol Ila Distillery is a participant in Feis Ile, the annual Islay Festival of Malt and Music.
Nose: Sweet smoke, oranges, menthol, fisherman's friends, oily. A faint meaty spam like note (in a good way). Old tents and a touch of toffee. Palate: Honey, soft ashiness, lemon cheesecake, cherriesand then some wet ash. Lots of peachesand cream in this one.
