On the nose, Octomore 15.3 presents a massive wave of peat smoke, as expected from its extraordinary PPM. Beneath the intense smokiness, there are layers of complexity, with aromas of dark chocolate, dried figs, and roasted nuts from the Oloroso casks, balanced by creamy vanilla, charred oak, and a hint of citrus zest from the bourbon casks.
The palate is equally bold, with a powerful hit of smoke dominating the initial experience. As the peat begins to mellow, rich and warming flavors emerge. The first-fill bourbon casks contribute creamy caramel, toffee, and sweet vanilla, while the Oloroso hogsheads bring notes of raisins, prunes, dark cocoa, and a touch of black pepper spice. There’s a pleasant nuttiness and a slight hint of coffee, adding depth and complexity.
The finish is long, smoky, and warming, with the peat lingering but gradually revealing a sweet, rich aftertaste of dried fruits, oak spices, and a subtle sherry influence. A gentle smokiness remains intertwined with notes of toasted almonds and rich dark chocolate, making the finish both intense and elegant
